Snack recipes that help you stick with your Kurbo goals
Let’s face it. We all like to snack! Snack attacks are a part of life. In order to avoid packaged snacks that are filled with sugar, refined carbohydrates, sodium and fat, it helps to have an arsenal of healthy snack recipes. The following snack recipes will keep you on track with your Kurbo weight loss goals, while satisfying your need for something salty, crunchy or sweet.
Salty & Crunchy Snack
When you have a craving for something crunchy and salty, but want to avoid red light potato chips, pretzels or goldfish, these roasted chickpeas are the answer! Filled with protein and healthy fiber, they pack a nutritional punch and they are delicious at the same time! Feel free to spice them up however you would like.
- 1 can chickpeas (also known as garbanzo beans) rinsed and drained (Y)
- Olive oil spray (Y)
- Sea salt
- Chili powder or seasoning of choice (cayenne, paprika, turmeric, garlic powder)
Per serving: G: 0, Y: 2, R: 0
Pre-heat your oven to 375 degrees. Toss chickpeas with spices and place in an even layer on a baking sheet lined with foil and spray with olive oil spray. Bake 40-45 minutes until crunchy. Delicious!
Sweet & Crunchy Snack
Got a craving for something sweet? These frozen bananas will satisfy your taste buds! While nut butter is a red light, it is a source of healthy fat and protein to include in your diet in the proper portion size.
Frozen Nut Butter Bananas
- 1 banana (G)
- Popsicle stick
- 1 Tbsp. nut or seed butter (peanut, cashew, almond or sunflower) (R)
- ½ cup Nature’s Path brown rice crispies or Rice Krispies (Y)
G: 1, Y: 1, R: 1
Peel banana and cut the tip off. Insert a popsicle stick into the cut end. Spread nut butter on banana. Roll the banana in rice cereal. Wrap in wax paper and freeze overnight.
Cold & Sweet Treat
Now that the weather is warming up, we start to crave cold and sweet snacks. This sorbet is made 100% from fruit and it tastes amazing!
- 3 c. of frozen watermelon (G)
- Juice from one lime (G)
- 1 tsp of honey (optional) (R)
- Fresh mint (optional)
G: 2, Y: 0, R: 1 (optional)
Cube and freeze 3 c. of watermelon. Puree the frozen watermelon, lime juice, honey and mint in your high speed blender until it is an icey sorbet consistency. Enjoy!
