A great winter vegetable to try is cauliflower! Cauliflower is one of those veggies that can be cooked in so many different ways. You can make cauliflower rice, cauliflower mashed potatoes, and even cauliflower pizza. Here’s my favorite recipe for cauliflower pizza. Hope you enjoy!
1 head cauliflower (use a food processor or cheese grater to make 2 ½ cups)
⅔ cup whole wheat flour
⅛ tsp salt
⅛ tsp pepper
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 cup shredded Parmesan cheese
1 ¼ cups low-fat or part skim mozzarella cheese, divided
2 eggs, slightly beaten
1 cup tomato sauce (low sodium if possible)
Veggies- olives, onion, mushroom, broccoli, tomato, fresh basil, bell pepper, mushroom
Fruit- pineapple, mango, apple
Meat- baked chicken, lean ground turkey, turkey sausage, turkey bacon
- Preheat oven to 425. Line a large rimmed baking sheet with parchment paper and coat with cooking spray.
- Grate the cauliflower using a cheese grater or place in a food processor (should be the consistency of rice) until you have 2 ½ cups of cauliflower crumbles. Add ¼ cup of mozzarella, ¼ cup parmesan, flour, eggs, oregano, basil, pepper, salt and garlic powder; stir to combine. Spoon crust mixture into 8-inch circles on prepared pan; smooth with spoon to form even layer. Bake until medium brown on bottom, about 20 minutes, and carefully flip over. Bake until evenly browned, approximately 5-10 minutes more
- Spoon sauce over each crust, add thinly chopped toppings, and sprinkle remaining mozzarella cheese. Optional: garnish with a dusting of oregano or basil on top. Bake until heated through and cheese is melted (broil to brown cheese if desired, about 5 minutes).
- Cut into 4 pieces and serve.
