Sometimes it’s just too hot to cook! These no-cook sauces are perfect for those hot summer days. With very little prep, these sauces will be ready in less than 15 minutes. Also, since raw vegetables maintain all their nutrients, these sauces are as healthy as they are delicious.

 

Tomato Basil Garlic Sauce

Serves 4

1 closed fist sized portion = 1 green light, 1 yellow light

Ingredients

2 lbs heirloom tomatoes or tomatoes on the vine, stemmed and chopped

1 cup fresh basil leaves, torn

2 cloves garlic, pressed or minced

1 tablespoon olive oil

¼ – ½ teaspoon salt

¼ teaspoon freshly ground pepper

Directions

Add all ingredients to a large bowl, gently mix and serve with your favorite whole wheat pasta.

Creamy Avocado Sauce

Serves 2

1 closed fist sized portion = 1 red light, 2 yellow lights

Ingredients

1 avocado

1 cup nonfat sour cream

Juice of 1 lemon

2 cloves garlic, chopped

¼ – ½ teaspoon salt

¼ teaspoon freshly ground pepper

¼ teaspoon red pepper flakes

Directions

Put all ingredients in a blender and blend until smooth. Add a couple of tablespoons of water if the sauce is too thick. Serve with your favorite whole wheat pasta.

 

Sweet Pea Pesto

Serves 4

1 closed fist sized portion = 1 green light, 2 yellow lights

Ingredients

20 oz. frozen sweet peas, thawed

½ cup blanched almonds, chopped

1 tablespoon lemon zest

2 tablespoons fresh lemon juice

¼ cup mint

2 tablespoons olive oil

2 tablespoons water or more as needed

¼ – ½ teaspoon salt

¼ teaspoon freshly ground pepper

Directions

Add almonds to the food processor and pulse until ground. Add the rest of the ingredients and pulse until smooth and creamy. Serve with your favorite whole wheat pasta.
