Beet, Arugula, and Goat Cheese Crostini 

Serves 6-8

Ingredients

  • 4 medium beets, peeled and diced
  • Olive oil
  • Sea salt
  • 1 baguette of whole wheat french bread, thinly sliced
  • 1 tablespoon honey, plus more for drizzling
  • 4 oz goat cheese
  • 2 cups baby arugula

Directions

  1. Preheat the oven to 425 degrees. 
  2. Toss the beets with a drizzle of olive oil and a sprinkle of salt. Spread evenly on the baking sheet and roast for 20-25 minutes or until fork tender. Remove from the oven and set aside. 
  3. Place the bread slices in a single layer on a separate sheet pan. Spray with nonfat cooking oil. Toast in the oven for 8-10 minutes, turning halfway through. 
  4. Whisk the honey and goat cheese until smooth. Spread the goat cheese on each crostini. Top with arugula and beets. Sprinkle with salt and another drizzle of honey. 

 

White Bean, Pomegranate and Mint Crostini 

Serves 8-6

Ingredients

  • 1 baguette of whole wheat french bread, thinly sliced
  • 1 15 oz can white beans
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ cup pomegranate seeds
  • Fresh mint for garnish

Directions

  1. Place the bread slices in a single layer on a sheet pan. Spray with nonfat cooking oil. Toast in the oven for 8-10 minutes, turning halfway through. Set aside.
  2. In a food processor or blender puree beans with liquid, lemon juice, garlic, salt and pepper until smooth. If too dry add a tablespoon of water at time. Season to taste with salt, pepper or more lemon juice. 
  3. Spread 1-2 tablespoons of white bean puree on each crostini. Top with pomegranate seeds and mint.
