This green light packed meal can be made from prep to finish in just 15 minutes!

Serves 4

1 closed fist = 2 greens, 1 yellow

Ingredients

  • 1 tbsp olive oil
  • Pinch of crushed red chili pepper (optional) 
  • 1 large clove garlic, sliced thin
  • 2 cups cherry tomatoes, halved
  • 1 handful basil + more for serving
  • 1 9oz box Trader Joe’s hearts of palm pasta
  • Salt & fresh ground pepper 

Directions

  1. Heat oil in a medium sauté pan over medium-high. 
  2. Add chili pepper and sauté for 30 seconds. 
  3. Add garlic, tomatoes, and basil. Sauté about 3 minutes or until tomatoes start to blister, stirring continuously. 
  4. Add hearts of palm. Cook until just warmed through, about 3 more minutes. Season to taste with salt and pepper. 
  5. Top with fresh basil, a drizzle of olive oil, and serve. 

Tips:

I use Trader Joe’s Hearts of Palm Pasta, however, if you don’t have a Trader Joes near you (I’m sorry!) you can order hearts of palm pasta on Amazon, or you can substitute spiralized zucchini, beets or carrots.
