Before heading out on the Halloween trail, indulge in these scary good green and yellow light Halloween treats. Have fun with them, especially the Pita Jack O’Lantern. Invite your friends and family to get creative making the snacks below. Whose is the scariest, creepiest, funniest?

Pita Jack O’Lanterns

Serves 4

1 pita = 1 green, 3 yellow

Ingredients

4 whole-wheat pitas

1 cup Kurbo hummus – recipe link below

1 English cucumber

1 carrot

4 oz sliced mushrooms

Kurbo Hummus

Directions

Cut the cucumber in half lengthwise and then into ½” slices so they represent a half-moon shape. Slice carrots into ½” rounds. Spread a couple of tablespoons of hummus on each pita. Use 1 sliced mushroom for each eye, one carrot round to make the nose, and 4 half-moon cucumbers to make the smile. You can also set up a veggie bar and have the kids make their own Jack O’ Lantern face on their pita. Start with a whole flat pita smeared with hummus so the veggies stick. Use veggies like sliced bell peppers, cherry tomatoes, carrot sticks (for hair), radishes, sugar snaps and any veggie you prefer. Have fun and get creative with it.

 

Blackberry and Cantaloupe Magic Wands

Serve 4

1 fist = 1 green

Ingredients

1lb blackberries

1 medium cantaloupe, seeded, peeled and cubed

12 wooden skewers

Directions

Skewer blackberries and cantaloupe cubes onto each skewer alternating fruit so you have a pattern of black and orange on each stick.

 

Honeydew Melon Bats

Serves 4

1 Bat = 1 green

Ingredients

1 Honeydew melon

1 bat-shaped cookie cutter

Directions 

Seed and peel the melon. Cut into thick slices long enough to fit the bat cookie cutter. Use the cookie cutter to make as many bats as you can. 

 

Spooky Celery Mummies

Serves 4

1 mummy = 1 green, 1 yellow

Ingredients

8 celery stalks, halved lengthwise and widthwise

1 cup nonfat veggie cream cheese

¼ lb low fat, low sodium deli ham

¼ cup whole almonds

Directions

Slice the ham into ¼” strips, set aside. They will be used as the mummy wrap. Cut the pointy ends off each almond, set aside. They will be used as mummy eyes. Neatly smear cream cheese into each celery stick. Layer the ham slices in a crisscross pattern over the cream cheese to resemble mummy wrap. Leave space unwrapped toward the top for the eyes. Use an almond end for each eye.

 

Candy Corn Fruit Cups

Serve 4

1 fist = 1 green, 1 yellow

Ingredients

1 pineapple, peeled, cored and cubed

4 – 6 tangerines, peeled and slices divided

2 cups nonfat plain Greek yogurt

Directions

In a stemless wine glass or 8 oz mason jar layer pineapple, topped with tangerine slices, topped with 1 giant ice cream scoop of yogurt.
