Backpacks are on and buses are in route– school is back in session! You know what that means: packed lunches are back on the to-do list. While packing lunches may feel like a chore, and options may seem repetitive, bringing lunch from home is often a more nutritious option than relying on school-provided lunches. Packing lunch gives you the power to pack it full of yellow and green lights, while many cafeteria options are red lights.

Have the family sit down at some point during the weekend to plan out lunch options for the week that will keep everyone full and excited about their lunch! This will reduce game-time stress and make prep easier. 

Get started with these five easy, healthy school lunches:

Chicken Salad Wraps

One serving = 3 yellow lights, 2 green lights

Ingredients

  • 3 cups shredded chicken (use leftovers from dinner!)
  • ½ c. low fat plain Greek yogurt
  • ½ c. chopped grapes
  • 1 stalk of celery finely chopped
  • Dash of sea salt and pepper
  • Whole wheat tortillas or whole wheat pita pockets

Directions

Blend ingredients and roll into wraps or stuff into pitas. Serve with apple slices and celery sticks.

 

Egg Salad with Greek Yogurt and Ak Mak Crackers

1 serving = 3 yellow lights

Ingredients

  • 9 eggs
  • 1/2 cup of low fat plain Greek yogurt
  • 1 tbsp Dijon or yellow mustard
  • 1 tsp of paprika
  • Dash of sea salt and pepper
  • Ak Mak whole wheat crackers or whole wheat bread 

Directions

Boil 9 eggs and peel.  Cut eggs into small pieces in a large bowl. Mix all remaining ingredients with your eggs. Serve your egg salad with Ak Mak Crackers and celery and carrot sticks.

Hummus Quesadillas

One serving = 4 yellow lights

Ingredients

  • 2 tbsp. low-fat red pepper hummus
  • 1 whole wheat tortilla
  • ½ cup black beans
  • ¼ cup of light shredded mozzarella cheese 
  • Sprinkle of taco seasoning mix 

Directions

Spray a sauté pan with olive oil spray and heat to medium. Fold tortilla in half and spread with hummus. Add black beans, cheese and a sprinkle of taco mix. Warm on both sides until heated through. Serve with jicama sticks and chopped pineapple. 

 

Deli Meat Pinwheels

2 serving = 2 yellow lights, 1 green light

Ingredients

  • turkey deli meat
  • light cream cheese
  • spinach

Directions

Spread turkey deli meat with light cream cheese and top with spinach. Roll and cut into slices.  Serve with orange slices, grapes and carrot sticks.

 

Lunch Kabobs

One serving = 2 yellow lights, 3 green lights

Ingredients

  • Deli Meat
  • Cherry Tomatoes 
  • Grapes 
  • Cucumbers or pickles 
  • Light cheese 

Directions

Instead of a sandwich, serve your meal on a stick! Thread pieces of deli meat, cherry tomatoes, grapes, cucumbers or pickles, and your favorite light cheese onto a wooden skewer and you’ve got a lunch kabob.
