We all have our favorite summer burger recipe, but sometimes it’s fun to change things up a bit! These burger recipes are easy to make and packed with flavor. Please note that Beyond Meat, a plant-based ground meat substitute, can be used instead of beef, turkey or chicken in any of the recipes below.

 

Sun-dried Tomato Burgers

Serves 4

1 burger = 1 green light, 4 yellow lights

Ingredients

¼ cup sun-dried tomatoes

1 lb lean ground beef, turkey or chicken

¼ cup chopped parsley

1 clove garlic, minced

½ cup feta cheese

1 teaspoon salt

½ teaspoon fresh ground pepper

Whole wheat bun, toasted

Arugula

Tomato, sliced for serving

Red onion, thinly sliced for serving

Directions

Rehydrate the tomatoes in hot water for 10 minutes, squeeze dry and chop. To a large bowl, add the chopped tomatoes and the rest of the burger ingredients. Gently mix to combine. Form into 4 patties. Heat grill to medium-high and cook over direct heat for 3-4 minutes per side or until it reaches an internal temperature of 165 degrees. Serve with or without a bun, arugula, tomato and red onion.

 

Asian Sesame Burgers with Tangy Slaw

Serves 4

1 burger with slaw = 1 green light, 4 yellow lights

Ingredients

1lb lean ground beef, turkey or chicken

1 medium carrot, peeled and grated

2 green onions, chopped

1 clove garlic, minced

1 teaspoon fresh minced  ginger

2 tablespoons low sodium soy sauce

1 tablespoon rice vinegar

2 teaspoons sesame oil

Whole wheat buns, toasted

Tangy Slaw, recipe below:

2 cups shredded cabbage mix (cabbage, carrot)

¼ cup fresh cilantro, chopped

½ cup non-fat, plain Greek yogurt

1 teaspoon sriracha sauce, (optional)

Juice of 1 lime

Salt and fresh ground pepper to taste

Directions

To make the slaw: Put all ingredients in a bowl and set aside.

To make the burgers: Add all ingredients to a large bowl and gently mix until just combined. Form into 4 patties. Heat grill to medium high and cook over direct heat for 3-4 minutes per side or until it reaches an internal temperature of 165 degrees. Serve with or without a bun, topped with slaw. 

 

Chicken Caesar Burgers

Serves 4

1 burger = 1 green light, 3 yellow lights

Ingredients

1lb lean ground chicken

1 teaspoon salt and fresh ground pepper

2 oblong slices whole wheat french bread for serving, toasted

Romaine lettuce for slaw

Red onion, sliced thinly for slaw

2 tablespoons caesar dressing, recipe below:

½ cup silken tofu

1 tablespoon olive oil

1 clove garlic, minced

1 tablespoon fresh lemon juice

1 tablespoon capers, drained and rinsed

1 teaspoon dijon mustard

1 teaspoon soy sauce

Salt and pepper to taste

Directions

To make the dressing: Put all ingredients in a blender and blend until smooth and creamy.

To make the burger: Put all ingredients in a large bowl and gently mix until just combined. Form into 4 patties. Heat grill to medium high and cook over direct heat for 3-4 minutes per side or until it reaches an internal temperature of 170 degrees. Serve with or without a bun, topped with dressing, romaine and onion.
